'Impiccato' (hanged) describes the real cooking method — a wheel of provolone bound and suspended from a tripod of branches over hot embers until it slowly melts, its rind protecting it from cooking too fast. Diners tear off bread, dip it into the melting cheese, and pass it around, alongside wine, folk songs, and traditional games like 'morra' — a communal ritual found in a few corners of the Basilicata and Campania hinterland, each town claiming its own version.
