49th edition of one of Tuscany's most important paese festivals, born in the early 1970s to bring together the residents of Olmo and neighboring hamlets. Grilled Valdichiana steak — Bistecca di Chianina, from the cattle breed native to this valley — run since 2008 by a dedicated Comitato Sagra della Bistecca that split from the original sports club to fund community projects. Local legend traces the word 'bistecca' itself to English knights who tasted roasted meat at a Medici-era Florence feast and called it 'beef steak.'
