Cervia's own thistle — cardo gobbo, a rare, small-batch winter crop — gets a January weekend built entirely around it in Piazza Garibaldi. Grown buried under sea sand, a method that develops unusual sweetness and crunch while eliminating the bitter aftertaste typical of common thistle. Served fried, on crostini, and in pasta dishes, alongside live music and children's activities.
