23rd edition of a grilled-meat and pasta festival at the Campo Sportivo Comunale, run by the Contrada Centro Storico, a mainstay of Bientina's historic Palio. The name comes from 'sombreri' — round ricotta-and-spinach ravioli named for resembling a Mexican hat — served with ragù, salsa rosa, or tomato, alongside 1kg bistecca alla fiorentina, veal steak, fried squid and shrimp, and grilled sausage.
