Now past its 43rd edition, this festival unfolds in a hilltop village of around 700 residents perched on Monte Scalambra, the watershed between the Aniene and Sacco rivers. Abbacchio alla cacciatora, allo scottadito, and al forno are joined by coratella, pasta all'arrabbiata, sausage, and beans. A Sunday morning walk called 'a piedi con Benedetto' commemorates Saint Benedict's own passage through the village, alongside a live ricotta and Pecorino Roiatese cheesemaking demonstration, a panoramic mini-train, and a geological walk to the nearby Volubro del Prello sinkhole.
